250ml Soy Sauce
250ml Rice Vinegar
6tbls of Golden Sugar
2tbls Sesame Oil
2tbls Sweet Chilli Sauce
Wasabi for garnish
3kg organic Orkney Salmon
This involves 3 stages, first make the teriyaki sauce, then marinade the fish and then grill.
For the teriyaki place the soy sauce and vinegar in a pan and bring to the boil with the sugar and sesame oil.
Add the juice of one piece of ginger and a dollop of sweet chilli sauce.
Once boiling turn it down till bubbling gently. Leave to reduce by half.
Coat the salmon fillet in the warm sauce and leave to marinade for an hour. Then grill for around 15 minutes, adding teriyaki intermitently.
Serve with wasabi
