Quick and easy basil and summer fruit pudding

This recipe for summer pudding can be adapted in many ways - either serve it in individual pudding moulds as described in the recipe or you can use a large pudding bowl. You can also make it with a dollop of clotted cream in the middle. Simply add a third of the summer fruits to the bowl or mould, add some clotted cream (to taste) and fill with more fruit mixture. You may have a little of the fruit mixture left over.
