  • Folk Train Recipe

    Pork Baked with Potatoes in Cider
    Serves 4 people

    4 pork chops or pork steaks
    1½ lb of potatoes
    2 onions
    2 or 3 cloves of garlic (or more, to taste) crushed and chopped
    A few juniper berries, crushed
    A bottle of dry cider

    Peel the potatoes and slice them thinly
    Slice the onions thinly
    Brown the pork on each side in a little oil
    Arrange half the sliced potatoes then half the sliced onion in a casserole
    Put the browned pork on top of the onions and potatoes and sprinkle the juniper berries and garlic around the pork
    Season with salt and freshly ground black pepper
    Cover with the remaining onions then the potatoes
    Pour the cider into the casserole so that it is just below the surface of the upper layer of potatoes

    Cover the casserole and place in the oven at 150oC for 1½ hours.
    Remove the lid, increase the temperature to 170oC and continue cooking until the top of the potatoes is browned.

    Serve with vegetables of your choice.
