The hand made pesto with watercress is so simple, yummy and dead easy to add to other ingredients.

I made the lamb and bulgar wheat patties and added grated halloumi which was delicious too.
My favourite has to be the 'twice-as-nice chicken'. I'd never thought of using dill with chicken, also chucked in raisins instead of the sultanas, which worked just as brilliantly! -

I made the beetroot fritters that Nigel did on one of his allotment visits, but instead of beetroot, used carrot instead.

I discovered that if you split the egg yolks and whites, and whip the whites it makes the batter really light and fluffy! -
