Richard's Diary Day 3
All this week our reporter Richard Cadey is travelling around Scotland with his guitar trying to raise lots of money for Children in Need. On Sunday night he was at Strathallan School Concert at Perth Concert Hall, followed by a trip to St John's Shopping Centre in the city centre on Monday morning. Then he headed to Aberdeen to Chicago at His Majesty's Theatre. Last night the team headed to Edinburgh to the Playhouse to see We Will Rock You. Here is Richard's diary from Day 3 of his tour...
"Fantastic night at Edinburgh Playhouse. Rousing sing-a-long in the bars during the interval. Great support from the staff. We got singing lessons from the X-Factor's Brenda Edward who plays the Killer Queen in We Will Rock You. We made £413 on the night. Brenda joined us at St James's shopping centre this morning to duet for half an hour and even managed to make me sound good. We raised another £127 so we can leave Edinburgh. Now on the M8 heading to Johnston Town Hall. Feeling knackered but looking forward to raising more money."

20cm sweet pastry case
Juice of 4 limes + finely grated rind of 3 limes
(Use a zester to make fine strips from the remaining lime)
3 medium eggs
1 tin (397g) condensed milk
300ml double cream
1 tablespoon caster sugar
Whisk the juice of 4 limes and the finely grated zest of 3 limes together with the eggs, condensed milk and 100ml of cream. Pour mix into prebaked tart case and bake in preheated oven 170C/Gas4 for 35 mins. Allow to cool completely. Beat remaining cream with sugar until softly peaking and swirl over top of the tart. Decorate with remaining zest to serve.
