Smoked Haddock, Leek and Potato Gratin
1 Small Leek – Finely chopped
1 Large Maris Piper – Thinly chopped
1 Smoked Haddock Fillet
100ml Milk
100ml dbl Cream
50g Grated Cheddar
Chopped Parsley
Poach the haddock in the milk, strain and stir in the cream. In a buttered ovenproof dish, place a layer of leeks, a layer of cooked fish and a layer of potatoes. Then do another layer of each. Check the liquid for seasoning; pour over the layers of potatoes etc. Place the cheese on top and bakes for 25mins at 200ºC
