Synopsis
Food is the main ingredient in tonight's show and Chris finds out why the Scotch egg is Britain's best bar snack. And Drivetime gastro-gnome Nigel Barden serves up Steak Tartare.

Steak Tartare

The great steak tartare can only be made with one cut of beef & that is the tail of the fillet. If anyone tells you different they are WRONG! Also the meat should never be put through a mincer unless it is a little hand operated one, but this wastes too much. Really the meat should be chopped & you will find that using a large chopping knife is a great way to get rid of the frustrations of the day. I believe this dish is best served with toast & chips, but straw chips with lots of salt. If you grill the mixture, you’ll have a good spicy hamburger.

Serves 4
Ingredients
750g beef fillet tails
1 large bunch parsley, chopped
Salt & pepper
65ml Worcestershire sauce
100ml tomato sauce
100g capers, finely chopped
150g shallots, finely chopped
4 egg yolks
Tabasco sauce to serve
Method
Cut the meat into matchstick-thin strips, then bundle them up, turn them around 180 degrees and cut into little cubes.
Start chopping the meat and continue until it eventually forms into a ball on the board.
Mix the meat with some of the parsley, some pepper, Worcestershire sauce and a little tomato sauce.
Spoon it onto serving plates and shape into a mound.
The remaining ingredients should be arranged around the meat, and an egg yolk placed in the centre of each serving.
This allows everyone to add & mix & play & season – that’s half the fun.

After buying my son an item of clothing I noticed the price was printed on the label in pounds and euros. Do shops have to reprint their labels everytime the exchange rate and if not how often? Question from Aime Rowe in Norfolk

There is no overall rule on this and each retailer will have their own policy. For example, one well known shopping group I spoke to said that they set the exchange rate at the beginning of each year for all their shops and only change this annually. This of course means sometimes they'll loose out on the rates but in other times they'll rake it in.
