The Great Burger
By John Torode from John Torode’s ‘Beef’
Prep time
Cooking time 15 mins
Serves 6
Ingredients
1.5kg fatty minced beef
2 red onions, diced
1 large handful flat-leaf parsley, chopped
2 tbsp oyster sauce
2 tbsp tomato ketchup
1 egg yolk
Method
Mix the beef, onion & parsley together in a bowl.
Add the oyster sauce & ketchup, then the egg yolk.
Mix well & knead until thoroughly combined.
Divide the mixture into 6 equal portions & roll each one into a large ball.
Place them in the fridge &, if possible, leave them to chill for a good hour.
To cook, either have your barbecue good & hot with coals glowing, or heat a griddle (ridged grill pan) over a medium heat. Do not add oil.
Place the burgers on the barbecue or griddle plate & leave for a few mins until the edges start to colour.
Slide a fish slice under each burger & turn them over. Repeat on the other side.
Turn the burgers again but, if using a barbecue, move the burgers to the side or another area where it is slightly cooler; if using a griddle plate reduce the heat underneath.
Leave the burgers to cook for a good 15 mins if you’d like them well done.
Serve your burgers with whatever you want… grilled bacon & a slice of good quality cheddar, melted under the grill. Toast the buns & spread them with mayonnaise, not butter.
Serve salad separately on the side, along with mustard & a wally (pickled gherkin). You’ve got to have a wally on the side!

Thursday 5 November - Question
If I was to buy the original Mona Lisa, does that mean I also buy/get the copyright to the painting and can earn money from anyone who sells a print of the painting? How does it all work? Steve Spencer
Thursday 5 November - Answer
Copyright resides with the author or artist responsible for a piece of art, not the owner. And in most countries copyright protection expires 70 years after the death of the artist or author. So the Mona Lisa is out of copyright, which is why you see it so often reproduced. You do have to be a bit careful though, because there may be two copyrights - one in the artistic work and one in a PHOTOGRAPH of the work. Generally, if the photograph depicts nothing but the artistic work itself and is indistinguishable from other photographs of the same work, you won't need permission to reproduce it. But if the photographer has used special filters, lighting or other methods which make it an artistic work in itself, then you may need to get a licence before reproducing it.
