SWINGING BELLES
COD IN BEER BATTER
Serves 4
Ingredients
500g (1lb 2oz) cod cheeks, membrane removed, or fillets of cod, cut into bite-sized pieces.
3 cloves of garlic, peeled and crushed.
½ bunch dill, chopped.
1.2 litres (2 pints) vegetable oil, for deep frying.
For the Batter
15g (½ oz) fresh yeast.
Pinch of Salt
Pinch of Caster sugar
200ml Beer
1 tsp cider vinegar
200g (7oz) plain flour.
Method
To make the batter, sprinkle the yeast, salt and sugar into a large bowl. Pour over the beer and vinegar and whisk in the flour. Leave to ferment for 15 - 20 minutes - it is ready to use when the mixture starts to bubble.
If using a deep-fat fryer, heat the vegetable oil to 180 degrees centigrade (350 degrees Fahrenheit). Alternatively, fill a deep, heavy-based frying pan to a depth of 2cm (3/4 inches) with oil and use a sugar thermometer to check that it has reached the correct temperature.
Cut each of the cod cheeks in half and place in a bowl. Add the garlic and dill and toss together. Dip the cod cheeks into the batter and fry in batches for 3 - 4 minutes until golden brown. Remove with a slotted spoon and drain on kitchen paper. Serve with Tartar Sauce.
TARTAR SAUCE
Makes 500ml/18floz)
vegetarian.
3 eggs yolks
2 tbsp cider vinegar
300ml (11 fl oz) vegetable oil
110g (4oz) capers
150g (5 oz) gherkins chopped
½ shallot, peeled and finely chopped
½ bunch of dill, chopped
2 tbsp chopped flat leaf parsley
Juice of ½ lemon
Salt and Black pepper.
Method
To make the tartar sauce, whisk together the egg yolks and vinegar in a bowl. Still whisking, start adding the vegetable oil very slowly to make a mayonnaise. The mixture should be thick and light once the oil is incorporated.
Stir in the capers, gherkins, shallot and herbs. Season with salt and pepper and add the lemon juice, then set aside. Store for up to 3 days in the fridge.
