The chefs putting their own money and reputations on the line are John Burton-Race, Nick Nairn, Gino D'Acampo, Aldo Zilli, James Tanner, Paul Rankin, Ed Baines, Atul Kochhar, Richard Phillips and Galton Blackiston.
Richard Phillips and Paul Rankin are tested to the limit as they take on the challenge of cooking in a restaurant renowned for its Middle Eastern cuisine. Richard and Paul must draw on any experience they have of this type of food if they are to have any chance of pleasing a roomful of demanding diners. The chefs are up against each other with one starter, one main course and one dessert each. The diners choose between the dishes, and whoever makes the most profit wins.
