Synopsis

Gastro-gnome, Nigel Barden tempts our taste buds this week by cooking with tea. Chris meets an amateur filmmaker, so smitten by Spielberg's classic Raiders of The Lost Ark; he decided to make his own version!

Chamomile Tea-Smoked Mackerel by Marcus Wareing from ‘One Perfect Ingredient, three ways to cook it’

“Don’t just think of tea as a drink – it’s an invaluable ingredient in cooking as well. There’s a huge variety of teas and I’ve experimented with many different blends to find the best teas to cook with. Three of my favourites are Earl Grey and jasmine, both of which give wonderful perfume and flavour, and chamomile, a tea that I’ve found to be perfect for smoking fish and meat.”

Makes 8 fillets

Ingredients

40g chamomile tea leaves
80g Demerara sugar
80g rice
A little olive oil
4 mackerel, filleted & pin-boned (skin left on)

Method

Mix the tea, sugar & rice together. Divide into 2 equal piles, spaced well apart, in a deep, heavy roasting pan (use an old one that you can keep for smoking in the future). Set a metal rack over the top of the pan & brush the rack with olive oil. Brush the skin of the mackerel fillets with olive oil too, then place the mackerel skin-side down on the rack. Oil & season the mackerel flesh. Tent the entire rack with foil, tucking it in securely all around the edges of the pan. Place the pan over a medium to high heat, using 2 burners to get an even distribution of heat.
Leave to stand for a minimum of 20 minutes, before uncovering the pan. If not eating straightaway, the mackerel can be kept for up to 2 days in the fridge. For the tastiest result there needs to be a good amount of smoke, so if possible leave the pan to stand outside.

Duck breasts can be smoked in the same way.

How much extra bristle does a multi blade razor remove? Is it a marketing gimmick or does it make a serious difference. If I have 1 millimetre of stubble how many additional microns does it remove? From Geoff

Now I haven't found anyone who can answer this tickly question to a degree of microns. However if you really want a silky smooth chin there does seem to be a consensus that more than one blade is best. Our friends at the consumer group Which got 48 men shaving with 3 razors each for a week and the disposables with fewer blades were more likely to leave cuts and rashes. Razor systems with 3, 4 and 5 blades were top performers.
But I have also spoken to a master barber - Joseph Lazante who travels all around Europe teaching others the art of the wet shave. In his opinion 4 and 5 blade razors can sometimes be a bit of a gimmick. The blades tend to be too close together making them quick to clog between strokes. But a 3 blade razor gives a fine close shave. The alternative is a single blade of the old fashioned type which you slot yourself directly into a metal mount. Whatever you choose if you want to do a really delicious job always use a shaving brush to soften the bristle first.
