Voices: Turning words into action
A chocolate vanilla fudge Meadows Meals : Chocolate

A Chocolate Vanilla Fudge

Chocolate Milkshake recipe
(serves 2)
About the cooks: The Dream Project. Junior and Shareen from the project, made lots of chocolate things. Here's their recipes:

Preparation time: 5 minutes
450 ml/16 fl oz of Ice Cold Milk
3 tbsp x Drinking Chocolate Powder
3 scoops x Chocolate Ice Cream
Cocoa powder, to dust (optional)

Place half of the ice-cold milk into a blender. Add the drinking chocolate powder to the blender and one scoop of the chocolate ice cream. Blend until the mixture is frothy and well mixed. Stir in the remaining milk.

Place the remaining two scoops of chocolate ice cream in two serving glasses and carefully pour the chocolate milk over the ice cream. Sprinkle a little cocoa powder (if using) over the top of each drink - serve at once.

Dark and White Chocolate Cheescake
(serves 10-12)
Preparation time: 1 ½ hours

Base - 225g/ 8 oz Toasted Oat Cereal
50g / 1 ¾ oz Toasted Hazelnuts,
4 tbsp x Butter
25g/1 oz Dark Chocolate

Filling -
350g/12 oz Full-Fat Soft Cheese
100g/3 ½ oz Caster Sugar
200 ml/7 fl oz x Thick Yoghurt
300 ml/10 fl oz Double Cream
1 sachet Gelatine
3 tbsp Water
175g/6 oz Dark Chocolate
Melted 175g/6 oz White Chocolate

Place the toasted oat cereal in plastic bag and crush with a rolling pin. Pour the crushed cereal into a mixing bowl and stir in the chopped hazelnuts.

Melt the butter and chocolate together over a low heat and add to the cereal mixture, stirring until well coated. Using the bottom of a glass, press the mixture into the base and up the sides of a 20 cm/8 inch spring form tin.

To make the filing, beat together the cheese and sugar with a wooden spoon until smooth. Beat in the yoghurt. Whip the cream until just holding its shape and fold into the mixture. Sprinkle the gelatine over the water in a heat proof bowl and leave to go spongy. Place over a pan of hot water and stir until dissolved. Stir into mixture.

Divide the mixture in half and beat in the dark chocolate into one half and the white chocolate into the other half. Place alternate spoonfuls of mixture on top of the cereal base. Swirl the filling with the tip of a knife to give a marbled effect. Level the top, chill until set and serve.

Quick Chocolate Vanilla Fudge
(Makes 25 - 30 pieces)
Preparation time: 1 ½ hours
Cooking time:
5 mins

500g/1 lb 2 oz Dark Chocolate
75g/2 ¾ Unsalted Butter
400 ml/14 fl oz Condensed Milk
½ x tbsp Vanilla Essence
Grease a 20 cm / 8 inch square cake tin. Break the chocolate into pieces and place in a large saucepan with the butter and milk. Heat gently, stirring until the chocolate is smooth. Do not allow to boil.

Remove from heat. Beat in the vanilla essence, then beat the mixture for a few minutes until thickened. Pour it into the preparation tin and level the top. Chill in the refrigerator until firm. Tip the fudge out onto a chopping board and cut into squares to serve.
