Smell is one of the chemoreception senses, ie it responds to chemicals. It is part of the olfactory senses. It is closely linked to the sense of taste. The main difference being that smell is sensing air-borne chemicals and taste is sensing chemicals in solution. In animals that live in water the two senses seem to be the same.

The area covered by the olfactory organs in a human is about 2.5 cm2 and are areas of mucous membrane. The olfactory epithelium is made up of neurones and columnar epithelial cells. The dendrite forms the receptor, projecting out above the end of the cell. The cell body carries the impulse from the dendrite to olfactory nerve.

The chemical makes contact with the dendrite ending that sticks out of the end of the cell into the nasal cavity. This contact triggers an impulse that travels down the dendrite, through the cell body and along the olfactory nerve. A human is thought to be able to distinguish between 4,000 different smells.
