Mashed
potatoes and leeks- from Ursula McDermott |
Ingredients
alb of potatoes
1 and half lb of leeks
Salt Butter
and milk
Cheese
|
Method
- Peel
and boil potatoes in salted water.
- Clean
and Chop and cook leeks, cook in a separate pan.
- Mash
the potatoes with milk and butter
- Drain
the leeks and stir into mashed potato.
- Put
leek and potato mixture into an ovenproof casserole dish.
- Grate
some cheese on top and put under a moderate grill for a
few minutes to brown
Tip:
It's delicious on it's own, or serve with sausages. Yummy
