Spiced apple, plum and blackberry dumpling pudding

 

100g brown sugar

150ml water

30g butter

1/2 teaspoon mixed spice

3 eating apples

4 plums

200g blackberries

 

Heat the sugar, water and butter in a frying pan. Cook until the mixture starts to thicken - about 5 minutes. Peel the apples, core and quarter. Halve and stone the plums.
Add the spice and prepared apples and plums to the pan and cook for 5 minutes.
Place in a baking dish with the blackberries, pre-set the oven to 180oc and prepare the dumpling topping -

 

150g self raising flour

75g cold butter, diced

25g brown sugar

pinch cinnamon

75ml whole milk

 

Place the flour, butter, sugar and cinnamon in a bowl and rub until the mix resembles fine breadcrumbs. Mix in the milk and then dollop spoons of the mix over the fruit.
Bake for 30minutes and serve hot with cream or icecream.
