Sticky glazed ribs

 

2 racks pork ribs

salt and pepper

1 teaspoon ground coriander

1/2 teaspoon ground cumin

 

 

 

Pre-set oven to 180oc.
Place the ribs on a wire rack on a roasting tray.
Rub with the spices and season with salt and pepper.
Place some water in the roasting tray.
Cover with tin foil and bake for one and a half hours.

 

 

Glaze

Serve with the chick pea fritters and is also great with grilled chicken, pork, steak or fish or with grilled vegetables.

4 tablespoons ketchup

4 tablespoons light soy sauce

1 tablespoon brown sugar

1 tablespoon worcester sauce

4 tablespoons cider vinegar

1 tablespoon honey



Place into a saucepan and stir over gentle heat until the sugar has dissolved.
Place ribs on a barbecue and brush with the glaze.
Keep basting them and turning them for about 10 minutes.
Brush over any left over glaze at the end.
