Basic Sweet Waffle Batter

 

250g plain flour

½ teaspoon baking soda

1 teaspoon baking powder

4 tablespoons castor sugar

3 medium eggs

50g melted butter, cooled

200ml buttermilk


Sift the flour, baking soda and baking powder into a bowl. Stir in the sugar.
Whisk the eggs, melted butter, and buttermilk together.
Mix into the dry mix and whisk to a smooth batter.
Leave to sit for five minutes.
Pour, as per instructions, into waffle iron and cook.
Remove from the waffle iron and drizzle with maple syrup or serve with berries or bananas and pecan nuts or chocolate sauce. Or try the following

 

Cinnamon Waffle with roasted plums and honeycomb cream

For the waffles add a heaped teaspoon of cinnamon.

Roasted Plums

6 plums, halved and stoned

100g castor sugar

Zest and juice of 1 lemon

1 teaspoon vanilla extract

200ml red wine

Place the plums in a baking dish.
Boil the other ingredients together until the sugar has dissolved and is syrupy.
Pour over the plums and cover with foil.
Bake at 180oc for half an hour or until soft.

Honeycomb cream

200ml double cream
50g crushed honeycomb ( or use chocolate covered honeycomb bars)

Whip the cream lightly and fold in the honeycomb.
