Hot chocolate fudge cake


275g light muscovado sugar

100g soft butter

75ml buttermilk

50ml sour cream

75g golden syrup

3 eggs

275g plain flour

1 teaspoon baking powder

1 tablespoon cocoa

100g melted dark chocolate


Grease and line a 10 inch cake tin with non stick parchment paper and preset oven to 160oc.
Beat the butter and sugar together for 2 minutes.
Mix in the sour cream and buttermilk.
Add the eggs and syrup and mix well.
Sift the flour, cocoa and baking powder into the butter mixture and mix well.
Fold in the melted chocolate.
Pour into the prepared tin and bake for 30-40 minutes or until an inserted skewer comes out clean.

Hot fudge sauce

100g chopped dark chocolate

75g chopped butter

125g sifted icing sugar

150ml evaporated milk

1 teaspoon vanilla extract
