'Most northerly' gin distillery completed at Dunnet

Work to construct what has been described as mainland Britain's most northerly distillery has been completed.

Dunnet Bay Distillers Ltd, which is run by husband and wife team Martin and Claire Murray, built the micro gin distillery at Dunnet in Caithness.

The first batches of Rock Rose gin have been distilled and tested.

The Murrays hope to start full production in time for the official opening of the distillery on 21 August.

Over the next three years, the company will receive support of £83,990 from Highlands and Islands Enterprise (HIE).

Mrs Murray has been working with experts in Caithness to research local botanicals which can be used to flavour the gin.

Her husband works in the oil and gas industry in Aberdeen and is now studying for a PhD in brewing and distillation at Heriot Watt University in Edinburgh.
