Why cheddar cheese belongs in Somerset

Cheesemaker Tom Calver explains why his firm uses traditional techniques to make cheddar.

Westcombe Dairy near Shepton Mallet, Somerset, is one of three members of the Somerset Artisan Cheddar Presidium.

The group is part of the Forgotten Food Scheme, launched by the North-West supermarket chain Booths and Slow Food UK.

It aims to reconnect people with well-made food and bring artisan produce back into the mainstream.
