  • Michael Mosley describes how food is broken down during the process of digestion. Each mouthful of food passes down the oesophagus and into the stomach. Here, hydrochloric acid and enzymes get to work, killing bacteria and chemically breaking down the food into smaller more useful components. Digestion is also helped by the churning action of the stomach's muscular walls, mashing the food to a pulp, in a process known as peristalsis. The liquefied food then passes from the stomach into the small intestine (duodenum), where fats, proteins and carbohydrates can be further broken down by enzymes. The lining of the small intestine is folded into millions of tiny structures called villi; these increase the surface area to about the size of a tennis court, allowing digested food to be rapidly and efficiently absorbed into the bloodstream.
