It was produced in central bakeries, each containing many mechanical machines both for milling flour and kneading dough. Visits to the tomb of a famous baker, Eurysaces, on the outskirts of Rome and to Ostia shed light on the processes involved; there is also an experiment, using a model, to illuminate how a kneading machine might have worked.
