Why is the smell of coffee better than the taste?

Sometimes foods or drinks that smell delicious, leave us disappointed when we taste them. Coffee for example. Why does this happen?

Odour म्हणजे तीव्र गंध, दुर्गंध. मस्त वाफाळती कॉफी आणि पुस्तक.... अहाहा.. किती मस्त ना! कॉफीची ती थोडीशी कडवट चव आणि भन्नाट सुगंध याबद्दल BBC Radio 4 च्या The Kitchen Cabinet मध्ये चर्चा चालू आहे. आपल्याला गंध किती प्रकारे घेता येतो, कॉफीचा गंध आपल्या मनावर कसा परिणाम करतो, याबद्दल Professor Barry Smith सांगतायत. So, you've got two ways in which you smell, or two routes by which you smell. You take odours from the outside and you sniff and you bring them in to the receptors at the top of the nose. You've also got odours that go in the opposite direction

So, there are two ways to smell.

Yes. एक म्हणजे sniff म्हणजे हुंगणे. हुंगताना नाकातून वास नाकातल्या receptors म्हणजे संवेदाकांकडेजातो. तिथून ती माहिती मेंदूकडे जाते.

But he also said odours go in the opposite direction. What does that mean ?

The opposite direction म्हणजे विरुद्ध दिशेने. इथे दोन दिशा आहेत, एक म्हणजे नाकावाटे आणि दुसरी म्हणजे तोंडावाटे. पुढचा भाग ऐकू. गंध विरुद्ध दिशेने कसे जातात?

You've also got odours that go in the opposite direction, from the mouth up to the nose and out. And when you swallow, you pulse odours up to the nose.

Tom
Ah, he said “from the mouth up to the nose”.

बरोबर, पण तो वास कशामुळे त्या दिशेला ढकलला जातो? ऐकूया. ‘Nose and out’ नंतर काय म्हटलंय ऐका.

You've also got odours that go in the opposite direction, from the mouth up to the nose and out. Now, when you swallow, you pulse odours up to the nose.

He said “when you swallow, you pulse odours up to the nose”.

Swallow म्हणजे गिळणे .जेव्हा आपण अन्न गिळतो तेव्हा त्याचा गंध नाकाकडे जातो. यासाठी त्यांनी pulses, हा शब्द वापरलाय. Push आणि pulse मध्ये काय फरक आहे?

Tom
Good question. ‘Pulse’ is a verb which describes the movement of the heart. If we say ‘the odours pulse up the nose’, it suggests something happens very naturally.

That’s right! इथे तो ‘the’ कसं म्हणालाय ऐका. इथले दोन वेगवेगळे उच्चार समजतायत का तुम्हाला ?

You've also got odours that go in the opposite direction, from the mouth up to the nose and out.

Tom
When 'the' is followed by a vowel sound, we say 'the' and add a 'y' sound.
For example:
opposite
the opposite

We don't do this for a consonant sound.
For example:
mouth
the mouth.

So it turns out that the brain treats those two different presentations of the same molecules coming from different directions differently.

Tom
Interesting. The brain treats the same coffee molecules differently based on which direction they come from.

Tejali
That’s right! यांचे जरी म्हणजे रेणू सारखे असले तरी ज्या माध्यमातून ते मेंदूपर्यंत पोचतात त्यावरून मेंदू त्यांचं वर्गीकरण करतो, मेंदू त्याप्रमाणे त्या रेणूंना treat करतं. रेणू म्हणजे molecules.

I understand. I also heard him say 'it turns out'.

Tejali
एखादी गोष्ट कशी ‘turn out’ होते, म्हणजे निष्कर्ष काय निघतो हे ती कशी घडते यावरच अवलंबून असतं. एखाद्या अनपेक्षित किंवा आश्चर्यजनक गोष्टीबद्दलची माहीती सांगताना turns out चा वापर अनेकदा होतो.

Well, I’m happy that we know more about coffee now. It turns out that we’re a great team!

It also turns out that we're out of time. आता निरोप घ्यायची वेळ झाली.

Can't we stay a little bit longer?

Language features

intrusion

When we use ‘the’ with words that begin with a vowel sound, we can hear a new, intrusive sound - /y/. This joins the two words together in connected speech.

[the] + [OPPosite] = [ theeYOPPosite]
[the] + [ANGriest] = [theeYAN Griest].

to treat

To treat is a verb which has many different meanings. In today’s episode we experience it in the following context:

It can mean ‘to process’.
The brain treats new experiences as more memorable than repeated experiences.

It can also mean ‘to aid’.
The doctor will treat your injuries and you should be fine.

It can also mean ‘to provide something as a reward’.
I am going to treat myself and book a nice holiday.

to turn out

To turn out means ‘to happen’ or ‘to transpire’. This expression is often used with information that's considered to be unexpected or surprising. We can also use it to suggest the end of a long period.

As it turns out, I’m no longer busy this weekend. I would love to come to the party!

He was feeling unwell for a few days before he went to hospital. It turns out that he had a nasty virus and should have visited earlier!
