Cover this winter warming pudding with velvety rich custard
Ingredients
6 oz self-raising flour
pinch of salt
3 oz shredded suet
¼ pint cold water
8 oz blackcurrant jam
Method
1. Stir together the flour, salt and suet. Mix with the water to form a firm dough.
2. Roll out to a rectangle 8x12 in. and spread thickly with jam.
3. Roll up firmly and wrap lightly in a piece of greased greaseproof paper. Wrap in foil, sealing the top and ends firmly.
4. Put the roly poly into a large saucepan of boiling water and cover. Boil gently for 2 hours, adding a little more boiling water if necessary. (If preferred, you can place the roly poly on a greased baking sheet, and bake in a hot oven (425F/220C/Gas Mark 7) for 40 minutes.)
5. Unroll very carefully and serve hot.
