Cooking with my Mom: matzo brei

American ex-pat Amy Troner loves it when her Mom comes over from Miami to help her cook up her favourite dish for her at home in Preston. Matzo brei is made from bits of dry crackers, some water and an egg - not the most exotic of ingredients, but a delicious snack when Amy pulls it all together under Mom's watchful eye!

How to make matzo brei
(serves one, just multiply the quantities for more people)

1 cup (115g/4oz) of matzo farfel
1 medium egg
splash of water

matzo farfel in colander
Matzo farfel - broken matzo crackers - rinsed with cold water, so they soak up a bit of moisture before being mixed with a beaten egg.
putting frying pan on gas rings
Melt some butter in a frying pan.
emptying bowl into pan
Put the matzo and egg mixture into the sizzling pan.
matzo brei in pan
Fry into golden brown on one side.
 spatula in pan
Flip it over and cook on the other side until it's the same colour.
matzo brei on plate
The finished matzo brei, ready to serve on its own, or with jam, or syrup, or sugar or .... whatever you fancy! Well done Amy!
