It's
very easy to grow - although the further north you are the more
difficult it is. This is not a problem in Jersey, unless there's
a freak frost.
Rosemary is a perennial evergreen shrub, and one of the good things
about it is that you can choose your plant to suit your garden,
and still have the same culinary use. You can get tall upright plants,
prostrate plants, or plants with different coloured flowers - deep
blue, middle blue, white, pink...
You can do whatever you want with Rosemary when cooking. It is predominantly
used in savoury dishes, although it does go well with chocolate,
and can be used in sorbet.
It is extensively used with lamb and veal, but is good with fish
as well. It is a great herb for grilling and smoking, infusions,
and making oils, stuffings, and dressings.
Rosemary will take quite intense heats, so there's no problem putting
it in at the start of the cooking.
