Marinated Pork Tenderloin with oyster mushrooms, broccoli, water chestnuts and spring onions with honey, soy and sesame dressing.

Pork Tenderloin with Oyster Mushrooms

Ingredients

  • 100ml sesame oil
  • 50ml dark soy sauce
  • 2 tbs clear honey
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 florets of broccoli cut into four and blanched
  • 2 spring onions sliced at an angle
  • 6 water chestnuts, halved
  • 6 oyster mushrooms, sliced
  • 8 oz pork tenderloin cut into three medallions and batted down to 1/2cm thick
  • Garnish: one peeled, seeded and diced plum tomato, toasted sesame seeds

Method

1. Marinate pork fillet approx one hour before cooking.
2. Pan fry seasoned pork in sesame oil for about one minute each side.
3. Using another pan fry oyster mushrooms and spring onions until soft and add blanched broccoli and water chestnuts.
4. When warmed through moisten with the dressing.
5. Place pork tenderloin around centre of plate and spoon broccoli and mushroom mix into the middle.
6. Spoon the remaining dressing around the plate and garnish with plum tomatoes and toasted sesame seeds.
