The finished Romany Lamb dish

Marinate Romany Lamb in red wine and herbs.
Cook the marinated Romany Lamb in a little liquid - stock, red wine or water - for about 3 and a half minutes.

Set the lamb aside to 'rest'. Add the Elderberry & Apple Jelly to the same pan to make the sauce.
At the same time cook a mixture of frozen peas and beans.
