Faster Chef - Lemon Sole

Pan-fried Lemon Sole with a Spinach Beurre Blanc and Pine nuts

4 6-8oz lemon sole fillets, skinned and trimmed
Coat the sole fillets in the seasoned flour and dust off excess. Place to one side.
Place white wine & vinegar in a pan with peppers and onions, reduce until around a tablespoon is left. Then on a low heat, whisk in the butter. Once the butter is melted and mixed in, add the double cream and keep on a very low heat.
Now heat up another pan with some olive oil. Fry the sole fillets for 1 1/2 minutes on each side until golden brown. Once you've put the fillets on a plate for serving, add the spinach to the sauce and leave for about a minute on the low heat to wilt, mix in and pour over the lemon sole.
Serve with your favourite vegetables or salad.
