Seared tuna steak with tropical salsa and noodles

4 tuna steaks approx 125g each
2 tablespoons lime juice
2 tablespoons olive oil

1 small mango, finely chopped
½ small papaya, finely chopped
1 small red fresh chilli, finely chopped
1 teaspoon finely grated lime zest
2 tablespoons lime juice
1 tablespoon olive oil
2 tablespoons chopped fresh coriander leaves

A finished seared tuna steak

1 packet egg noodles 200g
2 tablespoons sweet chilli sauce
6 spring onions, finely sliced
1 red pepper, finely sliced
1 teaspoon shrimp paste
1 tablespoon oil

• Place the fresh tuna in a ceramic dish and drizzle with the lime juice and oil.  If possible leave to marinate in the refrigerator for up to 2 hours.
• Combine mango, papaya, chilli, lime juice and zest, oil and coriander in a large bowl.
• Heat a large frying pan or griddle pan until very hot, cook the tuna for two to three minutes on either side, it should be pink in the middle, leave to rest.
• Cook the noodles in boiling water for two to three minutes and whilst these are cooking heat the oil in a stir-fry pan, add the sweet chilli sauce and shrimp paste, add the peppers and fry for two minutes, add the drained noodles and spring onions.
• Taste and adjust seasoning if required.
