Great for the summer term but a bit sad in winter. Out of the can
and into the bowl recipes have been favourites with students since
the invention of tin cans.
Total
sandwich
Only students really know how to do the total sandwich. The skill
has been passed on from generation to generation. Basic premise
is - get all the food groups in between two slices of bread.

is a one pan recipe. If you are a veggie you can substitute
the chicken for quorn chunks and the chicken stock for veggie
stock. |

Ingredients:
for two people
Preparation time: 10 mins
Cooking time: 30 mins
2
chicken breasts - cubed
1 large onion - finely chopped
4 medium potatoes - peeled and quartered
2 carrots - peeled and chopped into chunks
1 chicken stock cube
dried mixed herbs
salt & pepper
Method
- Put
some oil (sunflower or olive) in a saucepan - approx 4 dessertspoon.
- Add
the chicken breasts cut into bitesize chunks.
- Keep
the gas low and cook the chicken until it's gone white all
over.
- Chop
the onion quite finely and add to the chicken.
- Cook
gently until the onion has gone all gooey.
- Add
half a teaspoon of mixed herbs and stir.
- Add
the potatoes and carrots and stir.
- Fill
the pan two thirds full of water and bring to the boil.
- Bring
the pan to a simmer and add the stock cube.
- Simmer
for 25 - 30 minutes.
- Add
salt and pepper to taste.
