Delia Smith

Return of Delia

Delia Smith presented six programmes that showed how using ready-made products could take the fuss and the time out of preparing a great meal.

14 April

Lesley Waters' Baked lime cheesecake

It was the last episode of the series, and Delia rounded off her menu of cheats' recipes with the dessert course. Time-saving treats included Portuguese custard tarts, a no-cook cheesecake, a pancake concoction and an indulgent chocolate and ricotta mousse, all made quickly and easily with the help of some shortcut ingredients.

Recipes from Delia are not available on the BBC Food site, but you can try some of Delia's classic recipes from the BBC Food Recipe database, or try making a cheesecake from scratch with the help of our step-by-step video recipe for Lesley Waters' Baked lime cheesecake.

Peeling an apple

Delia Smith presented five recipes that she claimed take the stress out of cooking for friends. Using various shortcuts, Delia created quick, tasty meals without the fuss. On this week's menu were Thick onion tart, Apple pie, Pork stew, Cincinnati five ways chilli and Coconut cream pie. Delia met up with star chef Marco Pierre White who praised Delia's new approach to cooking. "It's all about being a realist at home," he said.

Fresh coconut

In this episode Delia's recipes had an Asian flavour. First up, Delia cut corners with curry by making a spiced chicken masala from a tandoori spice mix and pre-prepared ginger chicken. This was accompanied by a coconut sambal rustled up from coconut chunks from a packet and jalapeño peppers from a jar. Prawns straight from the freezer and frozen Thai ingredients went into Delia's Thai green prawn curry, while Vietnamese spring rolls were packed with pre-cooked prawns, cucumber and lettuce.

Away from the kitchen, Delia visited a spice factory to see how ready-prepared spices are blended. Plus, Delia helped open a deli for the daughter of the late Radio 1 DJ John Peel who, she says proudly, once described her as the "most uncool person he had ever met".

Delia cooking

Delia continued on her mission to help people who can't cook or just don't have the time with more quick and easy recipes. This time Delia delved into the freezer aisle to show what ingredients are on hand to make life easier in the kitchen. Delia made a simple hummus from frozen chickpeas, rustled up a normally tricky risotto dish in minutes, and took frozen scallops straight from the freezer to the grill. Away from the kitchen, Delia came face to face with Norwich City fans at a heated Annual General Meeting.

17 March

Spaghetti Bolognese

This episode came from the storecupboard with recipes that use tins and jars to cut time. First, canned mince and tomato sauce cut the corners for Spaghetti Bolognese. Next up was a trofie pasta dish (trofie are small pasta 'quills'), followed by a spice rub for steak. Delia showed how canned crab and lobster can be used for fishcakes and soup. Outside the kitchen, we followed Delia on her daily visit to church. Later Delia met her good friend and TV art critic Sister Wendy.

10 March

The first episode focussed on potatoes. Forget peeling and scrubbing, said Delia - frozen mash can do the hard work for much-loved favourites, such as shepherd's pie and fish pie, plus Delia showed how to make a chilled summer soup.

Fish pie

Frozen rösti were used in an easy-to-make bread loaf. A more adventurous Peruvian dish, Patatas Arequipa, was made with oven-ready potato wedges. With the cooking done, there was time for Delia to focus on her other passions. For the first time, viewers got to know more about her than ever before as the cameras got a glimpse of Delia's world beyond the kitchen and found out how family, faith and football play a big part in her life.
