Bill's day revolves around making time to sit down to breakfast and dinner with his family, no matter how busy he is. In this programme he shared some of his favourite 20-minute mid-week dinner ideas with us. Most of these were one-dish meals that were simple to prepare, drawing on pantry and fridge staples, for easy family food. This salmon recipe is a lovely, light fish dish for a quick supper. Serve some new potatoes or rice with it to make it more substantial.

If you love risotto but don't love standing at the stove stirring for 20 minutes, then this recipe is for you. Start it off in the traditional way then transfer it to the oven for a simple and filling supper.

This is a good family meal and can be left to its own devices after a little preparation. It's perfect now the weather is cooling down - a great one-dish dinner!
