Bill cooked his Sydney-famous coconut bread for a tasty breakfast treat before preparing light and delicious dishes for a pool party and Asian-style barbecue.

Bill's coconut bread has the words 'never to be removed' written alongside its entry on the menu at his Sydney cafes - and when you try it, you'll understand why! It's ideal for breakfast in bed as you don't need a knife and fork, but it would also be wonderful for afternoon tea. While it's baking, the kitchen fills with the wonderful aromas of coconut, cinnamon and vanilla. Serve it toasted with some butter and a dusting of icing sugar.

Bill's Asian-style barbecue can be easily adapted for a British autumn! Simply roast the chicken in the oven for half an hour. The coriander chicken is simple to make and the marinade of lime, coriander, garlic and pepper gives the chicken a wonderful aromatic flavour - perfect to chase away the winter blues.

Bill's pool-party menu (below) will work just as well in cooler climates and would make a great Christmas buffet with a difference!
