The classic French upside-down apple pie is reportedly named after a pair of sisters who invented the dish. Have a go at making your own puff pastry for Mary Berry's perfect tarte tatin, or cheat with some good quality all-butter puff pastry, as in the Hairy Bikers' apricot version.
