
Why just use rhubarb in desserts? Lengths of the pink stuff can perk up cocktails as well.
Preheat the oven to 200C/400F/Gas 6.
Cut the rhubarb into 3cm/1¼in pieces, place into a baking dish and roast in the oven for 15 minutes. Set aside to cool.
Blend the rhubarb, sugar and cinnamon in a food processor to make a smooth purée.
Keep 60ml/2fl oz of the rhubarb purée in the food processor and blend along with the ice cream and bourbon until smooth.
Serve the cocktail in a tall glass.
