Uncooked chutney


  • 225g/8oz pears, peeled, cored and roughly chopped

  • 225g/8oz cooking apples, peeled, cored and roughly chopped

  • 225g/8oz sultanas

  • 225g/8oz raisins

  • 450g/1lb onions, peeled and roughly chopped

  • 450g/1lb demerara sugar

  • 600ml/1 pint cider vinegar

  • 1 tbsp salt

  • 1 tsp each ground cinnamon, paprika, ground coriander and ground ginger

Preparation method

  1. Put the first 5 ingredients into a food processor and whizz together until roughly processed. If necessary do it in batches.

  2. Put into a large bowl or container and mix in the vinegar, spices, sugar and salt.

  3. Stir well to mix and leave to stand, covered, for 24 hours.

  4. Put into sterilised jars and store in the fridge until using.
