Put the first 5 ingredients into a food processor and whizz together until roughly processed. If necessary do it in batches.
Put into a large bowl or container and mix in the vinegar, spices, sugar and salt.
Stir well to mix and leave to stand, covered, for 24 hours.
Put into sterilised jars and store in the fridge until using.
