Place the pineapple chunks and lime juice into a cocktail shaker and muddle well.
Add the rum, cherry brandy and grenadine and shake well.
Fill a highball glass with crushed ice. Pour the rum and cherry brandy mixture over the ice.
Top up the cocktail with the pink grapefruit juice, then the pineapple juice. Hook the slice of pink grapefruit over the side of the glass.
