Preheat the oven to 200C/350F/Gas 6.
Cook the sweet potato slices in salted boiling water for 5-6 minutes, then drain.
Arrange the sweet potato slices in a small ovenproof dish and season, to taste, with salt and freshly ground black pepper.
Pour over the cream and crumble the Stilton on top. Transfer to the oven to bake for 5-10 minutes, or until the cheese is bubbling and golden-brown and the potatoes are tender.
