
55g/2oz caster sugar
1 vanilla pod, split and seeds scraped out
1 tbsp vegetable oil
100g/3½oz strawberries, stalks removed
2 tbsp red wine vinegar
Place the sugar, vanilla seeds, and oil into a small saucepan over a low heat and cook for 1-2 minutes.
Add the strawberries and red wine vinegar and poach on a low heat for 3-4 minutes.
Pour into a small bowl, to serve.
