Top leftover lentil stew (or any veggie stew for that matter) with sweet potato for an easy no-meat cottage pie-style dish.
Preheat the oven to 200C/400F/Gas 6.
Boil the sweet potatoes in a large pan of salted water until they are tender.
Drain and mash with a little olive oil.
Add the lentil stew to an ovenproof dish.
Spoon the mash over the top and bake in the oven for 30 minutes, or until the top is golden-brown.
