
The addition of thyme brings an aromatic twist to a classic Cuban daiquiri.
1 sprig fresh thyme, bruised slightly with a rolling pin
25ml/1fl oz fresh lime juice
1 tsp caster sugar
2 tsp Galliano, or other herbal liqueur
2 tsp limoncello
40ml/1½fl oz white rum
sprig fresh mint, to garnish
Place the thyme, lime juice, sugar, Galliano, limoncello and rum into a cocktail shaker, add a handful of ice and shake well.
Strain the cocktail into a coupette glass and garnish with a sprig of fresh mint.
