1kg/2¼lb fresh strawberries
250g/9oz icing sugar
100ml/4fl oz lemon (juice of approx. two large lemons)
Crush the strawberries and rub through a nylon sieve to extract the seeds. Stir in the lemon juice then whisk in the icing sugar.
Pour the mixture into an ice cream machine and churn until frozen or make granita style if you don't have a machine.
