Savour the flavours of spring with a zingy, gin cocktail.
Place the mint and fruit into a cocktail shaker and mash (muddle) together with the end of a rolling pin.
Add the créme de pêche, gin and apple and elderflower juice, and shake hard with a handful of ice.
Strain the cocktail into a whisky tumbler filled with crushed iced and garnish with the apple fan and mint sprig.
