
50g/1¾oz spinach
50g/1¾oz walnuts, chopped
¼ onion, finely chopped
2 tbsp olive oil
salt and freshly ground black pepper
2 tsp red wine vinegar
4 slices streaky bacon, grilled until crisp, to serve
Place all the ingredients except the bacon into a bowl and stir well to coat the spinach leaves.
To serve, top with the bacon.
