Preheat the oven to 200C/400F/Gas 6.
Score the mango flesh in a criss-cross pattern down to the skin. Push up against the skin to invert the mango so that the flesh sticks out in cubes like a hedgehog.
Place the mango 'hedgehog' onto a baking tray and scatter over the remaining ingredients.
Bake the mango on the baking tray in the preheated oven for 4-5 minutes and serve immediately.
