
This is a simple classic gin fizz from mid-19th century America. The egg white sounds odd, but it adds a lovely frothiness.
50ml/2fl oz gin
½ lemon, juice only, retaining rind
2 tsp caster sugar
1 small fresh egg white, preferably organic
soda water to fill
Place all the ingredients into a cocktail shaker with a handful of ice and shake hard.
Strain into a small highball glass, top with soda water and serve with the lemon rind.
