Ingredients

  • 25ml/1fl oz Pastis

  • crushed ice

  • 3-4 dashes Peychaud's bitters (or other bitters)

  • 1 tsp sugar syrup

  • 50ml/2fl oz Cognac

  • twist lemon peel, to garnish

Preparation method

  1. Place the Pastis into a tumbler and swirl around the glass. Pour the Pastis out of the glass and reserve to use in another drink.

  2. Fill the tumbler with crushed ice, to chill the glass.

  3. In a mixing glass, mix together the bitters, sugar syrup and Cognac. Stir for about 20 seconds.

  4. Pour the crushed ice out of the tumbler and discard. Strain the cocktail into the tumbler, garnish with a twist of lemon peel and serve.
