Fresh figs work well in savory dishes like this delicious vegetarian tart recipe with feta.

Preparation method

  1. Preheat the oven to 180C/350F/Gas 4.

  2. Heat the oil, butter and sugar in a frying pan over a gentle heat. Fry the onions and garlic for 20 minutes.

  3. Line four small tart tins loosely with the puff pastry. Cover with the onions, balsamic vinegar, figs, thyme and feta cheese

  4. Crimp the pastry at the top and cook in the oven for 15–20 minutes, or until the pastry has risen and become golden-brown.

  5. Serve with green salad and cherry tomatoes.
