
Try this simple but sophisticated starter that needs no cooking and will be ready in minutes.
1 smoked mackerel fillet, flesh flaked, bones removed
100g/4oz full-fat soft cream cheese
1 lime, juice only
10 fresh chives, chopped, plus an extra 4 long chives for wrapping
1 tsp horseradish sauce
1 tbsp double cream
salt and freshly ground black pepper.
4 thin slices smoked salmon, each about 13cm/5in square
Mix all the ingredients together, apart from the smoked salmon and four long chives, and season to taste with salt and freshly ground black pepper.
Divide the filling mixture among the four slices of salmon, placing some into the middle of each slice, then fold the salmon around the filling to make a neat parcel. Tie one long chive around each parcel like a ribbon, to secure.
Serve the parcels with the rocket and micro herb salad leaves, drizzled with a little olive oil.
