Salmon-wrapped smoked mackerel pâté parcel

Try this simple but sophisticated starter that needs no cooking and will be ready in minutes.

Ingredients

To serve
  • handful rocket leaves

  • small handful mixed micro herbs, to garnish (optional)

  • olive oil, for drizzling

Preparation method

  1. Mix all the ingredients together, apart from the smoked salmon and four long chives, and season to taste with salt and freshly ground black pepper.

  2. Divide the filling mixture among the four slices of salmon, placing some into the middle of each slice, then fold the salmon around the filling to make a neat parcel. Tie one long chive around each parcel like a ribbon, to secure.

  3. Serve the parcels with the rocket and micro herb salad leaves, drizzled with a little olive oil.
